Baked Chicken Melt


  • 4 - 6oz boneless skinless chicken breasts
  • ½ Cup sliced bell pepper 
  • ½ Cup sliced mushrooms 
  • 1 ½ Cups shredded mozzarella cheese
  • 1 jar Fiorella’s marinara sauce 
  • Salt and pepper to taste


  1. Preheat oven to 350 degrees 
  2. In a casserole dish, lay the whole chicken breasts in a row 
  3. Season chicken with salt and pepper and top them with sliced peppers and mushrooms 
  4. Generously spoon the marinara sauce over the chicken and vegetables. Pour the remaining sauce around the chicken 
  5. Top everything with the shredded mozzarella cheese and put in the oven, uncovered, to bake for 30 minutes. 


  • Can serve with an array of sides, such as pasta, risotto, rice or even lentils 
  • Broil for the last 2-3 minutes if you want the cheese to carmelize
