Baked Chicken Melt
Ingredients
- 4 - 6oz boneless skinless chicken breasts
- ½ Cup sliced bell pepper
- ½ Cup sliced mushrooms
- 1 ½ Cups shredded mozzarella cheese
- 1 jar Fiorella’s marinara sauce
- Salt and pepper to taste
Preparation

Preheat oven to 350 degrees
- In a casserole dish, lay the whole chicken breasts in a row
- Season chicken with salt and pepper and top them with sliced peppers and mushrooms
- Generously spoon the marinara sauce over the chicken and vegetables. Pour the remaining sauce around the chicken
- Top everything with the shredded mozzarella cheese and put in the oven, uncovered, to bake for 30 minutes.
Tips
- Can serve with an array of sides, such as pasta, risotto, rice or even lentils
- Broil for the last 2-3 minutes if you want the cheese to carmelize
